Flour and Sugar Free Valentine's Day Treats

Happy Valentine's Day! Here are three treats I made for the family. First, brownies with cream/cream cheese "frosting" topped with sugar free raspberry jam. (Even my sister who is a certifiable carb/sugar junkie loved these and asked for seconds!) A cinnamon roll muffin with whipped cream cheese and dark chocolate peanut butter cup. Nary a speck of flour or sugar in any of it (brownies have a tiny bit of honey)

The "frosting" for both is nothing but cream cheese and a bit of cream whipped together with some Stevia. I added some cinnamon to the frosting for the rolls.

Dark Chocolate Peanut Butter Cup 

For every 1 Tbsp coconut oil add in a half dropper full of stevia and 3/4 Tbsp baking cocoa. Melt in the microwave and stir well. (I make 6-8oz at a time) I measure off one Tbsp of the mixture into a silicone cupcake mold and put it in the freezer. Coconut oil hardens quickly so they are ready in minutes and can be easily popped out of the mold. You can also use cupcake papers. I spread fresh ground peanut butter on them. Crushed macadamia nuts, almonds, mixed nuts and coconut shreds are also really good. You can use Truvia if you like, (I think it's 2tsp per Tbsp coconut oil, but you might want to check on that.) I can't use Truvia. Being a frankenfood sweetner, it makes me retain water. Strangeness. But there it is. The health benefits of coconut oil are amazing. I can eat up to 3 oz a day. Any more than that I notice the scale up a bit the next day. But, sometimes, it's just worth it. Enjoy and use your imagination making homemade candy rounds!
